Just Eat It: Goats Curd, Mint & Tomato salad

This week from Franklins comes a very simple salad made up with only a few ingredients.  Enjoy!


  • 500g Mixed Heritage Tomatoes
  • 200g Goats Curd
  • Bunch of Mint
  • Good quality Extra Virgin Olive Oil
  • Maldon Salt


  1. Slice your tomatoes
  2. Scatter with Malden salt
  3. Drench with the oil
  4. Leave to stand for half an hour
  5. Chop the mint and chuck on the tomatoes
  6. Sprinkle the goats curd on
  7. Serve with a good sourdough (Brickhouse Bakery for example)
