Just Eat It: Poached Beef with pickles and mustard

Delicious weekend din-spiration from Franklins in East Dulwich – perfect for that first glimpse of spring!

Poached Beef with

Ingredients & Method

  • 500g beef fillet
  • 500ml red wine
  • 2 bay leaves
  • Sprig of thyme
  • 1 cucumber
  • Sprig of dill
  • 10 coriander seeds
  • 100 ml white wine vinegar
  • 100g sugar
  • 4 tablespoons wholegrain mustard
  • 2 tablespoons honey
  1. Place the beef, red wine, bay and thyme in a saucepan, slowly bring to a light simmer for 10/15 minutes
  2. Leave the to cool and refrigerate
  3. Slice the cucumbers
  4. Put white wine vinegar, sugar, dill, bay leaf & coriander seeds in to a saucepan and bring to the boil
  5. Pour mixture over the cucumbers & leave to cool
  6. Mix together the honey and mustard
  7. Slice the beef, serve with the pickles and sweet mustard
