Just Eat It: Flat Breads and Aubergine

COR!  This week’s Just Eat It recipe from Franklins in East Dulwich is a perfect lunchtime or supper dish, which is all about the aubergine… enjoy!

Aubergine & Flat Bread

For the Flat Bread:

  • 1kg         Strong flour
  • 50g         Yeast
  • 25g         Salt
  • 2tbsp     Olive oil
  • Chopped rosemary/thyme
  • Water to mix

For the Aubergine mixture:

  • 3              Aubergines
  • 1              Onion, chopped
  • 2              Garlic, chopped
  • 8              Tomatoes, chopped
  • ½ tsp     Cinnamon
  • ½ tsp     Cumin
  • Bunch Flat Leaf Parsley, washed and chopped
  • Olive oil

Method:

  1. Mix the flat bread ingredients, knead in to a ball (on a lightly flour-dusted surface), and leave in a bowl to rise, with a towel to cover
  2. Scorch the aubergines either with a blow torch or on the gas flame
  3. In the meantime, sauté the onions until golden and add the chopped garlic & spices
  4. Peel the aubergine, discarding skins, and add to the onions
  5. Add the chopped tomatoes to the mixture
  6. Cook for 10 minutes
  7. Go back to the flat bread mixture – tip out from the bowl on to a lightly flour-dusted worktop
  8. Roll out the mixture to a thickness of around 3mm and divide in to the number of desired pieces
  9. Heat a pan and once hot, cook the bread on each side for 1-2 minutes before taking off the heat
  10. Add chopped parsley to the aubergine mixture
  11. Plate up the aubergine, and place the flat bread on top
  12. Serve with yoghurt & parsley
